Muffins for babies – Apple carrot muffins

I baked these carrot and apple muffins for babies for a special occasion: my little one’s 15th month little celebration. This are by far the tastiest muffins I did so far, and I know it because I tried one (or many!) and he loved them. Besides that, it is really easy to bake using this baby muffins recipe. These apple carrot muffins are suitable for babies older than 12 months old but are also for older kids and adults!
Ingredients (about 12 muffins)
- 2 eggs
- 160 ml rapeseed oil
- 240 ml water
- 1 apple
- 1 carrot
- 50 g hazelnuts
- 265 g rice flour
- 260 g agave syrup
- 1 teaspoon sodium bicarbonate
- 1 teaspoon cinnamon
- Peel and slice the carrot and apple. Boil them with water.
- Cook until they are soft and remove the water. Use a hand blender or smash them with a fork.
- Grind the hazelnuts using a kitchen blender.
- Preheat the oven at 170-180 °C.
- Line your muffin tray or individual forms and set aside. If you are using a metal tray or metal forms you can place muffin papers inside those. For silicone trays or forms there is no need to use muffin paper (but you can do it if you prefer).
- Place all ingredients in a big bowl and mix them with a handheld electric mixer until you reach an homogeneous texture.
- Divide the batter evenly between the muffin forms.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out without moist crumbs attached.
- Transfer all muffins to a wire rack to cool completely.
